1357, from O.Fr. oistre (Fr. huître), from L. ostrea, pl. or fem. of ostreum "oyster," from Gk. ostreon, from PIE *ost- "bone" (see osseous). Related to Gk. ostrakon "hard shell" and to osteon "bone."
