Nutrition. this compound added to food as a preservative and for flavor and color, especially in pork, fish, and beef products: implicated in the formation of suspected carcinogens.

Sodium nitrite is always a great word to know.
So is elective. Does it mean:
a preparation containing an insoluble dye converted by reduction into a soluble leuco base, or a vessel containing such a preparation
selecting for combination or action; tending to combine with certain substances in preference to others, such as elective attraction
