What is pulled chicken? pulled pig? pulled pork?

The meat used is the butt of the animal - usually a butt roast. Originally, this culinary term pertained to fowl and referred to fowl that was baked, then skinned and boned, and the flesh cut up and put into a rich white sauce. Pulled pork is slow-cooked, shredded by hand into succulent threads of meat, then doused with sauce. There is also a term pulled sugar meaning 'sugar cooked to the hard-crack stage, then kneaded and pulled by hand until it is soft and pliable enough to make decorative shapes'.
