( sometimes lowercase ) a sauce of egg yolks, shallots, tarragon, butter, vinegar, and sometimes white wine and chopped chervil.
Also called Béarnaise sauce.

< French, equivalent to Béarn district in SW France + -aise, feminine of -ais -ese
