Eustace 
proper name, from L. Eustachius, probably from Gk. eustakhos "fruitful," from eu- "well" + stakhys "ear (of grain)." Eustachian tubes, in anatomy, so called for It. physician Bartolomeo Eustachia (d.1574), who discovered the passages from the ears to the throat.
