It is combined with a settling tank to gather particles of stock.

If an ordinary sink is used, a settling tank should be placed under it, as shown in Figure 75.

After the wort had been pumped from the kettle its course was followed through the hop jack over the coolers to the settling tank.

The stock is steamed out into a settling tank and allowed to settle over night, after which it is pumped into the soap kettle.

The lower end of this drain discharges into a cesspool, or settling tank, or into a stream, as local conditions permit.
